2 large sprigs of mint, 2 oz Sunday Sunrise-infused gin, 1 oz grapefruit juice, 1/2 oz fresh lemon juice1/2 oz simple syrup

Add all ingredients except wine to a cocktail shaker with a handful of ice. Shake until thoroughly chilled, about 15 seconds. Strain into a short glass with ice. Hold a bar spoon upside-down just above the drink. Slowly pour the wine over the back of the bar spoon to create a layer of wine on top of the cocktail.
